Orange Marinated Chicken with Pea and Bacon Salad
All of the components of this meal can be prepared in advance and then cooked and assembled before serving your guests. A delicious meal idea for your dinner party. Serves 4
Chicken
Preheat the oven to 180C.
4 chicken pieces
2 oranges - juice and zest
2T olive oil
2T fresh thyme
Marinade the chicken for 4 hours in the above ingredients. Return to room temperature and cook for 45 minutes or until cooked through.
Pea and Bacon Pasta Salad
4 cups of cooked fusilli pasta
500g cooked peas
200g cooked rind less bacon, sliced
1T fresh mint chopped
Mix the above and pour over the dressing. Serve at room temperature with the chicken.
Dressing
5T olive oil
1T French wholegrain mustard
2T honey
1T white wine vinegar or lemon juice
Mix together and pour over the salad. Toss the salad to coat the pasta.
Alternative suggestion : serve the chicken with a bacon and mushroom rice salad.
