Notes from my Kitchen 6 - Birthday party biscuits
It’s my son’s birthday party this weekend and I am working around a Spiderman theme – perfect for a 5 year old.
Preparation and organisation are key when you are doing all the baking yourself. I have made these biscuits ahead of time and will store them in airtight containers.
These biscuits are crunchy and can be iced to suit your colour scheme or theme. I have decorated them with spiders using smarties/m&m’s and black icing gel.
Biscuits – make 30
Preheat the oven to 180C.
225g self-raising flour
½ t ground cinnamon or ½ t vanilla extract – depending on the flavour your want
115g caster sugar
115g butter
1 medium egg, beaten
Grease 2 baking trays.
Sift the flour and cinnamon. Add the sugar. Add the butter and rub in with your fingers. Add the egg, a little at a time until you have a stiff dough.
Dust a surface with flour. Roll out the dough until it is ¼ inch thick. Using a biscuit cutter, cut out your biscuits and place on a baking tray.
Bake for 15 minutes.
NB: leave them on the tray to cool before you try to remove them or they will break. Ice and decorate them when cool.
Icing
1 cup icing sugar sifted
Add enough boiling water to form a paste. Add colour paste before you add the boiling water.
Ice the biscuits and decorate as desired.
For a more adult version, whip 200ml cream with 2T icing sugar and 1t vanilla extract. Layer the biscuits with cream and berries, Top with a biscuit dusted with icing sugar,
