Zucchini Carbonara
A carbonara without the carbs? This recipe uses zucchini or cabbage instead of pasta, with the same rich carbonara sauce. A treat for two.
8 rashers of streaky bacon, chopped
500g zucchini sliced into matchsticks
1 clove garlic (optional)
120ml cream
2 egg yolks + 2t cream, beaten together
grated Parmesan cheese
Fry the bacon until crispy. Remove from the pan and fry the zucchini in the bacon fat until cooked. Add the garlic and toss through. Add the cream and simmer until it has thickened slightly. Remove from the heat and mix in the eggs. Add the bacon and Parmesan, and mix through. Season with freshly ground pepper. Enjoy.
