Watermelon, Mint and Lemon Refresher

Watermelon has an iconic association with summer. It contains flavour, fiber and a lot of it's own water, so it's a natural re-hydrator when the weather heats up. You can personalise this recipe with your own additions - cayenne for heat, ginger for zing, and lemon zest for refreshing taste.

3T mint leaves
1/2 cup boiling water
2 cups watermelon peeled, cubed and seeds removed
1T lemon juice


Steep the mint in the boiling water. Remove the mint and allow to cool. Place the cooled water, melon and lemon juice in a blender. Blend and serve over ice with lemon and mint.
