Versatile Carb Free Casserole

Do you need a recipe for lunch to compliment your carb free eating plan? This one can be altered to suit your taste and to ensure that one recipe can be varied if made and eaten often. It is a great vegetarian menu option, but you could add chicken and bacon instead of cauliflower, or a cup of each.

2 cups courgettes sliced
2 cups pumpkin roasted and cut into cubes ( use butternut as an alternative)
1 cup onions
1T olive oil
500g cottage or cream cheese
2 large eggs beaten
2 cups cooked cauliflower or 2 cups shredded cooked chicken with bacon bits added
2T mixed herbs
1/2 cup freshly grated Parmesan
1/2 cup grated cheddar


Preheat the oven to 180C.
Roast the pumpkin and cook the cauliflower.
Saute the onions and baby marrow in the oil. Set aside.
Mix the cream cheese, eggs and herbs together. Season with salt and pepper. Place half the vegetables on the bottom of a large casserole dish. Spread half the cheese mixture on top. Then repeat this process. Mix the Parmesan and cheddar and sprinkle over the top. Bake for 30 to 40 minutes until golden.
