Salad Nicoise
This salad is wonderful for those on a low carb diet. It has great
variation in ingredients and is filling. This makes a perfect meal for one!
Tin of tuna
2T Calamata olives
2 hardboiled eggs
1/4 cup of sliced cherry tomatoes
A handful of green beans blanched and
sliced into thumb size lengths
Mix together. Add some ice berg lettuce if you like.
Vinaigrette
2/3 cup extra virgin olive oil
1/4 Dijon or grainy mustard (or half of
each)
1/4 cup red wine vinegar
1/4 cup lemon juice
1 medium shallot
1/2t balsamic vinegar
Salt and pepper to taste
Mix in a blender until smooth. Serve over
salad and store the remainder in an airtight container in the fridge until needed.
