Ginger Steak Salad
This salad is a great way to use leftover steak. I always cook
extra to use at lunchtime meals. The ingredient amounts are not specified so
that you can add as much or as little of each ingredient as you like.
Grilled Steak sliced
Baby kale or bok choi
sliced cucumber
sliced red bell pepper
mange toute
Place the ingredients on a plate and
drizzle over the dressing.
Ginger Vinaigrette
1/2 cup toasted sesame oil
1/2 cup rice wine vinegar
6T Dijon mustard
1T grated fresh ginger
Salt and pepper to taste
Mix together and serve. Store leftover dressing
in an airtight container in the fridge.
