Avocado Dressing
I am back on line with more low carb recipes. Avos are such a
great addition to a meal. I recently had a meal in a restaurant rated top in
its location on Trip Advisor. The addition of avocado to a simple Caprese salad
with a basil pesto added a new dimension in taste. Eating well takes a little imagination,
but the reward in taste and nutritional value is worth it.
2 ripe avocados
1/4 cup freshly squeezed lemon juice
1/4 cup water/yoghurt or homemade low carb
mayonnaise
1T extra virgin olive oil
1 clove garlic (optional)
Salt and pepper to taste
Place in a blender until smooth. Serve
immediately with a Waldorf salad or as a dip for crudité.
Tip: Substitute the garlic with 1t fresh
chives for a change in taste
Make a simple Waldorf salad with mixed
lettuce, grated apple and carrot and toasted walnuts.
