Easy Christmas Mincemeat
The taste of apples in this recipe makes a wonderful alternative to store bought mincemeat. Once you have a couple of jars in the fridge, the next step is making your own mice pies.
125g brown sugar
1/2 cup apple cider
500g apples peeled and cut into cubes
1/2t mixed spice
1t ground cinnamon
300g currants and raisins, fruit cake mix or dried cranberries
50g chopped dates
75g chopped pecan nuts
100ml orange juice
juice and rind of half a small lemon
In a large saucepan dissolve the sugar in the cider over a low heat. Add the remaining ingredients to the saucepan and mix well. Simmer for 45 minutes over a low heat, stirring regularly.
Sterilise 2 jam jars and spoon in the mixture while hot. Allow to cool and store in the fridge.
