Banting Style Meatballs
These are the easiest meatballs to make as they are baked in the oven. We make them every week and enjoy them with the courgette oven bake on my blog or with my homemade tomato sauce recipe from my cookbook.
600g mince (use beef, lamb or chicken)
1/2 cup feta cheese cut into small cubes
1/2 onion finely chopped
2T finely chopped mint
2T finely chopped flat leaf parsley
1 small egg beaten
a few grinds of black pepper
Preheat the oven to 190C.
Mix all the ingredients together. Roll into balls and place on a baking tray. Bake at 190C for an hour or until the meatballs are browned and cooked through.
Variation: Serve these with tomato pasta sauce that contains no sugar or added carbs - I use the recipe in my cookbook - and serve with courgette style noodles for a Banting Spaghetti Bolognese
