Weekend Biscuits
These are a wholesome, multi-grain snack with dried fruit that may not look beautiful, but taste great. The cornflakes give them a good crunchy texture. The dried fruit give a delicious fruity sweetness that works well with the oats and coconut.
125g butter
3/4 cup light brown sugar
1/2t vanilla extract
1 egg, lightly beaten
1/2 cup self raising flour
1/2t ground cinnamon
3/4 wheat bran
1/3 cup coconut
1/3 cup oats
125g dried fruit chopped (I used pears, if you would prefer something more tart use apricots or cranberries)
1 cup crushed cornflakes
Preheat the oven to 180C. Grease 3 baking trays.
Cream the butter and sugar until pale. Add the egg and vanilla. Sift the dry ingredients and add to the mixture.
Roll into balls and place on the baking tray with space to spread. Flatten with your thumb. Place the cornflakes in a shallow bowl. Roll each biscuit in the cornflakes.
Bake for 12-15 minutes. Cool on a wire rack.
