Crunchy Pecan Slices

I made this recipe for the first time today and everyone had seconds for afternoon tea! I have made similar recipes with jam and coconut, but this one is crunchy and chewy and tastes of caramel. I am a great fan of baking in a tray as there is no rolling or cutting. It's a simple way to make a quick and easy treat.



Base
1/2 cup self raising flour
1/4 cup sugar
1/2 cup coconut
1/2t ground cinnamon
60g melted butter

Topping
2 eggs, lightly beaten
1t vanilla extract
1 cup coconut
90g chopped pecan nuts
1.5 cups light brown sugar
1/2t baking powder

Preheat the oven to 180C. Grease a 28x18cm baking tin.
To make the base sift the dry ingredients and add the melted butter. Mix together to  form a dough. Press into the baking tray and bake for 15 minutes.
Mix the eggs and vanilla together. Add the rest of the ingredients to make the topping and stir together. Pour over the base and bake for 25 minutes.
Allow to cool and serve.
