Colourful Low Calorie Salad
I made this salad from ingredients in my fridge. I served it with steamed corn bread at our family barbecue this weekend.
I am not a fan of lettuce and am always looking for ways to make salad interesting without lettuce. I like the colours in this salad and using the lemon juice I squeezed over the avo, to stop it discolouring, and a drizzle of olive oil as a dressing, reduces the calories and adds a freshness to the dish.
1 large tomato diced
1 small avocado cubed
1 cup sugar snap peas cut in half, at an angle
1/2 cucumber sliced and cubed
1/4 cup feta cheese cut into cubes
juice of half a lemon
drizzle of olive oil
salt and freshly ground pepper
Place the vegetables in a bowl. Squeeze the lemon juice over the avocado. Add the feta cheese. Season with salt and pepper. Toss the salad and drizzle over the olive oil just before serving.
Garnish with sugar snap peas split in half and fresh edible flowers. Serves 4.
This salad would be a good accompaniment to any pasta dish, grilled fish or roast.
For Banting: Add some pumpkin seeds for crunch and don't be shy with the olive oil!
