Smoked Salmon and Pomegranate Salad

As a child we had a pomegranate tree growing in our garden next to the swimming pool. We ate them out of curiosity long before they became a fashionable ingredient. They do add beautiful colour and texture to food and compliment the strong taste of salmon.
Serves 4

300-400g smoked salmon
1/2 cup pomegranate rubies
2 cups of mixed salad herbs - I use lettuce, pea shoots, salad burnett, parsley and rocket
lemon wedges to serve

Dressing
1 cup of cream cheese
1/3 cup yoghurt
3T dill finely chopped
1T Dijon mustard
1t honey
salt and pepper to taste

To make the dressing, mix all the ingredients together. Place in a bowl and serve with the salad.
To make the salad, lay the herbs on a plate. Artfully place the salmon and lemon wedges on top. Sprinkle the pomegranate seeds over the salad. Garnish with fresh dill tips.
Serve with crusty bread.
