Salted Caramel and Pecan Nut Brittle

A recent weekend away at the lake with a friend and her daughter got me thinking about sweets you can make with your children for their party. I was inspired to try this brittle with my favourite nuts and cinnamon.

400g brown sugar
1 cup chopped pecan nuts
125g butter
1t vanilla extract
1t cinnamon
1T salt

Line a baking tray with baking paper.
Heat the sugar in a heavy based saucepan over medium high heat. Swirl until the sugar turns golden and liquid.
Remove from the heat and add the nuts, vanilla and butter, stirring until the butter dissolves.
Add half the salt and cinnamon.
Pour onto the baking paper and sprinkle over the remaining salt.
Allow to cool completely and break into shards. Store in an airtight container.

Tip; leave out the salt for a more traditional pecan brittle.
