Hazelnut Star Biscuits
This popular biscuits gives Christmas a very warm, continental feel; especially serve with coffee. Making them is a labour of love, and eating them your reward!
Makes 30
300g ground hazelnuts
3 egg whites
250g icing sugar
1t ground cinnamon
1t finely grated lemon zest
Preheat the oven to 150C. Line 2 baking trays with baking paper.
Beat the egg whites until stiff, gradually adding the icing sugar a little at a time. Remove half a cup of the mixture and set aside for the topping.
Gradually add the nuts, cinnamon and lemon zest until all incorporated.
Sprinkle a clean surface or pastry mat with icing sugar. Roll out the mixture until 7mm thick. Cut out the stars and place on the lined baking trays. Top with the half cup of egg white mixture and bake at 150C for 30 minutes.
Allow to cool and store in an airtight container.
