Christmas Muffins

It has become a tradition to make these on Christmas morning in our house. I hope you and your family enjoy this Happy Christmas wish.

150g honey
100g brown sugar
70g butter
3T milk
250g flour
1t baking powder
1/2t ground cloves
2t ground cinnamon
1t ground ginger
2T cocoa
2 eggs, lightly beaten.
100g chopped almonds or your favourite nuts
100g dried cranberries

Preheat the oven to 175C. Line a muffin tin with 12 cupcake cases.
warm the honey, sugar, butter and milk until melted and the sugar is dissolved. Allow to cool.
Sift the flour, baking powder, spices and cocoa. Mix the dry ingredients into the cooled honey mixture. Stir in the eggs, then add the nuts and cranberries.
Place the mixture into the cupcake cases and bake at 175C for 25 minutes.

Serve with butter, honey and a dollop of cream or mascarpone.
