Food Around the World - Fish and Chips
British Cuisine has been called uninspiring. Many celebrity chefs have changed that with their restaurants and TV shows. I decided to include a recipe for fish and chips for England as this is the food I remember best from my visit there. Cod or Plaice would normally be used, but you can use any firm white fleshed fish.
500g white flesh fish
1 cup flour
1t salt
1 egg, separated
1T oil
1 cup of larger
salt and pepper to taste.
Make the batter by mixing all the ingredients in a food processor. Whisk the egg white until firm and fold into the batter. Heat sunflower oil in a large saucepan. Season the fish fillets and dip in the batter. Fry in the oil, turning once to cook evenly. Serve with tartare sauce and garnish with fresh parsley.
I make chips in the oven. Preheat the oven to 200C. Wash the chips and cut into slices - I leave the skin on. Take some olive oil and rub it on your hands. Rub each chip in your hands to coat with oil. Bake for an hour.
