Food Around the World - Beef Stroganov
According to Wikipedia "Beef Stroganoff or Beef Stroganov (in Russian: Бефстроганов Befstróganov) is a Russian dish of sautéed pieces of beef served in a sauce with smetana or sour cream. From its origins in 19th-century Russia, it has become popular around the world, with considerable variation from the original recipe."
I ate this simply made dish as bar food in a modern Moscow bar served with a few slices of bread; it may have been for the tourists, but the taste was flavoursome and hearty.
This recipe serves 4.
500g rump steak, cut into strips
2 onions finely chopped
50g butter
1 cup sour cream
2T tomato paste
2t hot mustard
a pinch of sugar
Fry the onions in the butter until soft. Add the meat and brown on the outsides. Add the remaining ingredients, season. Simmer over a low heat for 30 minutes. This will help to tenderise the meat.
Serve with rice or noodles.
You could add mushrooms and chopped parsley if you wish, but my Russian version did not have these.
Banting: omit the sugar, add the mushrooms and enjoy!
