Food Around the World - Breakfast Pancakes

If we believe everything we see in the movies, then pancakes would be Americans' favourite breakfast. It is a versatile offering to which each person can add their own favourite toppings. My husband loves maple syrup and cream, my boys prefer homemade strawberry jam and butter, and my choice is lemon curd with mascarpone and topped with fresh blueberries.
This recipe has been handed down in my husband's family , together with the tea cup for measuring the ingredients. I have converted the ingredient measures to metric for ease of use, but still have the original recipe and teacup. The pancakes are sweet, light and crisp, and my family wolfed them down this morning.

2t butter
112ml sugar
1 egg
450ml flour
1T syrup
112ml milk
112ml water
1/2t bicarb
1/2t cream of tartar

Melt the butter and add it to the sugar. Mix well, Sift the dry ingredients and add the sugar mixture to it. Beat the egg and add it to the water and milk. Add to the rest of the ingredients.

Fry in a hot pan and serve warm.
