Super Moist Fruit Loaf
I make this loaf over the Christmas period instead of Christmas cake as my family prefer it. I pour over a syrup and add nuts on top for extra flavour, but it tastes god without these too.
200g brown sugar
1 cup milk
250g butter
250g fruit cake mix
60g chopped dates
60g glace cherries
1 beaten egg
350g flour
1t baking powder
3ml bicarbonate of soda
5ml cinnamon
2 ml cloves
Place the sugar, milk, butter and dried fruit in a saucepan. Bring to the boil, then simmer for 2 minutes. Remove from the stove and allow to cool.
Add the beaten egg.
Sift the dry ingredients. Add to the other ingredients, mixing well.
Pour into a greased 23cm loaf tin and sprinkle over a handful of chopped pecan nuts. Bake in a preheated oven at 170C (160C fan) for 1 to 1 1/4 hours or until an inserted skewer comes out clean.
Make a syrup from 125ml orange juice mixed with 125ml water, boiled for 5 minutes. Leave to cool slightly and pour over the loaf just after taking it out of the oven. Allow to cool completely in the tin, turn out and store in an airtight container.
