Easy Sweet and Sour Chicken Casserole
Are you getting caught up in the Christmas rush? Here is an easy recipe to feed your family
1 chicken cut into pieces
1 packet brown onion soup
3T apricot jam
3T mayonnaise
Salt and pepper
Make up the soup as per the packet instructions, but using only half the liquid. Add the other ingredients and allow to stand while you brown the seasoned chicken pieces. Place the browned chicken pieces in a casserole dish and pour over the liquid. Cook at 160C for 1 1/2 to 2 hours until the chicken meat is cooked through.
Serve with Basamati rice and a green salad.
