Sweet Potato Gratin

This is comfort food for a low carb lifestyle.

6 medium sweet potatoes
3T roughly chopped herbs such as lemon thyme or rosemary (pair your herbs with the meat you are serving!)
3 garlic cloves, crushed
2t salt
½t freshly ground pepper
1 cup cream or stock

Slice the potatoes thinly and season with salt and pepper. Place the garlic and herbs even at the bottom of the baking dish.
For crispy potatoes, place the slices on their sides so that they stand up vertically.
Pour over the cream or stock. Bake for 45mins to an hour or until a knife inserts effortlessly.
The liquid should have evaporated by the time the potatoes are cooked and the tops of the potatoes will have a lovely crispiness.
