TMM - Spicy Fish Nuggets
All made in a food processor and grilled in the oven, these fish nuggets are carb free and packed with flavour. Serves 2.
1T fresh parsley
1/2 bunch spring onions
300g white fish fillet
400g peeled large prawns
2 cloves garlic
1t dried chilli flakes
1T freshly grated ginger
salt and pepper to taste
Place all the ingredients in a food processor and blitz. Shape into nuggets, makes about 20. Place under the grill for 10-12 minutes, turning halfway through. I use the oven/grill combo to cook these for wonderful results.
Spicy Salad
1 courgette
1 carrot
1 tomato
zest and juice of 1 lemon
1t Worcestershire sauce
1t tabasco sauce
Grate the courgette and carrot. Chop the tomato. Mix and add the remaining ingredients.
Tartare Sauce
1 cup mayonnaise (I use homemade as it is carb free)
1T freshly chopped parsley
1T white wine vinegar
4 finely chopped gerkins
2 rinsed and chopped capers(optional)
5 green olives chopped
1/2t dill tips
Mix together and serve with the fish nuggets.
