TMM Mussels with Tomato Broth

A hearty soup for winter, this meal is simple to make.

2 cloves garlic finely chopped
1ml dried red pepper flakes or use smoked paprika
45ml olive oil
250ml dry white whine
250ml tomato sauce/passata
2kg mussels cleaned

In a large pot cook the garlic and pepper flakes in the oil until golden. (1-2 minutes). Add the wine and stir through. Then add the tomato sauce and mussels.. Cover and cook for 6-8 minutes until the mussels open. Discard any mussels that have not opened.  Season with salt and pepper. Garnish with freshly chopped parsley.
