Pan Fried Salmon with Mint Pesto

Need a show stopper that suits low/no carb eaters at your dinner party? Wow them with this meal. Mint pesto does not discolour like basil pesto and tastes delicious with a meaty fish like salmon. A light salad served with the fish and pesto and you have a meal in hand.

4 salmon fillets
2T extra virgin olive oil
2 lemons

Salad
100g rocket or cress
100g feta cheese
olives

Pesto
1 cup mint leaves
30g cashew nuts
50g pecorino cheese
olive oil

Make the pesto first. Place the mint leaves, juice of half a lemon and cashew nuts in a food processor. Blend until finely chopped. Mix in the grated cheese and add just enough olive oil to blend together (a few drops).

Heat up your pan. Brush the salmon with a little olive oil on both sides and season with salt and pepper. Cook on each side for 5 minutes or until pale in colour. Squeeze over the lemon juice.

Serve with a salad made of rocket, feta cubes and olives. Drizzle over a little olive oil and balsamic vinegar.

hint: this pesto and salad tastes equally good with lamb chops!
