Broccoli and Cauliflower Salad with Cream Cheese Balls
Sounds odd, but tastes good and is a low carb meal for lunch.Serve with fish for a delicious main meal.
1 head of cauliflower cut into florets
1 head of broccoli cut into florets
4 little gem lettuces cut in half
1 lemon cut into quarters
pecan nuts
Make the salad by steaming the vegetable florets. Season with salt and pepper. Arrange on a platter with the lettuce and pecan nuts.
Heat up a pan and chargrill the lemon wedges on each side. Place on the plate.
Cheese balls
1 cup cream cheese
10g finely chopped chives
salt and pepper to taste
3T sesame seeds
Mix the cheese and chives, season to taste. Roll into balls or use a melon scoop. Toss in the sesame seeds and serve with the salad.
Drizzle with olive oil or serve with salad dressing on the side.
