Mango Ice-cream

I am planning and oriental inspired meal and have decided to include this at the end of the meal.

500g fresh mango pureed
1/2 cup sugar
1/2 cup water
1/2 cinnamon stick
1 lemon grass stalk
1 egg white
1/4t finely grated fresh ginger
1 cup coconut cream
1 tin ideal milk chilled

Make a stock syrup by gently heating the water and sugar with the cinnamon, lemon grass and ginger. Allow to cool, strain and mix into the mango puree. Beat the ideal milk until it has doubled in size. Stir in the mango. Beat the egg white until stiff. Fold into the ice cream mixture. Add the coconut cream. Pour into a container and freeze overnight. Serve with passion fruit and mint sprigs.
