Lemon Chicken and Root Vegetable Bake with smoked Paprika

I need something quick to make and satisfying to eat for supper tonight. This is it. Lemony, spicy and nearly comfort food that you will add to your recipe book to make again and again.
Serves 4

1.5kg chicken pieces
1 lemon cut into eighths
1/2 cup black or green olives
1 clove garlic
1/2T roughly chopped ginger
1 cup chicken stock
2T olive oil
1t smoked paprika
4 sweet potatoes cut in half
6 carrots peeled and cut in half length ways

Preheat the oven to 180C.
Marinade the chicken in the lemon, stock, ginger, paprika and garlic while the oven is heating. Place the chicken and sauce in a baking dish. Add the root vegetables and drizzle with olive oil.
Cook at 180C for an hour or until the chicken pieces and sweet potatoes are cooked through.

Tips: add chorizo sausage or bacon for extra flavour. Serve with mashed potato or rice and petite pois peas.
Add 1/2 cup creme fraiche to the sauce, 5 minutes before the dish is ready, for a creamy flavour.
