Oven Dried Tomato Recipe
These are an excellent way to use up excess tomatoes. They can be used in the same way as sun dried tomatoes. In my blog I include recipes that use these.
3kg field tomatoes (these have more flavour than greenhouse ones)
3T Olive Oil
3T Fresh Oregano
Preheat your oven to 70C.
Cut the tomatoes into quarters and remove the seeds. Place the tomatoes on a large non-stick oven tray with the skin facing down. Drizzle over enough olive oil to lightly coat the tomatoes. Scatter fresh oregano leaves over the tomatoes. Bake for 5-7 hours, turning once. Remove from the oven. Leave on the tray to cool and 'dry off" i.e. the oil should no longer be visible. Store in a Ziploc bag in the fridge or freezer.
