TMM: Mussels in a Creamy Sauce
Following the popularity of the tomato and mussel broth, here is another ten minute meal recipe for those on a low carb meal plan.
30ml butter
1 onion finely chopped
375ml dry white wine
250ml fish or vegetable stock
125ml cream
pinch of saffron or turmeric for colour
1kg mussels in their shells, cleaned
2 tomatoes chopped
Squeeze of lime juice
coriander
salt and pepper to taste
Melt the butter and saute the onion until soft. Add the wine, stock, cream and saffron. Bring to the boil. Add the mussels and simmer for about 8 minutes with the lid on. The mussels should be open. Discard those that do not open. Season to taste. Garnish with the tomato, coriander and lime juice.
