Roasted Cauliflower and Red Onions
This meal is a low carb accompaniment to any meal.
1 head of cauliflower
2T extra virgin olive oil
2 cloves garlic peeled and sliced
2T sesame seeds
1 large red onion peeled and sliced into wedges
salt and pepper to taste
Preheat the oven to 180C. Place the onion and cauliflower in an oven proof dish. Toss the garlic and sesame seeds in the olive oil. Pour over the vegetables. Roast for 30 minutes, turning after 15 minutes. The vegetables should be golden. Season to taste.
This is delicious served with lamb chops.
Lamb Chops with Minted Yoghurt
