Banting Steak Rolls
I am always looking for ways to eat without carbs. I love a good steak and this is a way to make a steak roll without the bun and mayonnaise. Give it a try, it's perfect for a barbecue/braai or picnic.
380g rump steak
knob of ginger
clove of garlic
salt and pepper
Cut the ginger in half and rub on either side of the steak. Do the same with the peeled clove of garlic - as you would to infuse garlic into toasted bread. Season with salt and pepper. Cook your steak on a barbecue or hot griddle pan to your liking. Allow to cool slightly and slice.
Filling
2 small avocados
90g cream cheese
lemon juice to taste
salt and pepper
Mash the avo and add the remaining ingredients
Cut a large hothouse cucumber into ribbons.
Spread some filling onto a cucumber ribbon. Add some steak and roll up. Secure with a toothpick until it's time to eat!
Variation: Make large courgettes into ribbons and cook in a griddle pan. Use steak, caramelised red onions and grated cheese as your filling. Eat them warm.
