Banting Tuna Pate
Have you tried the seed crackers recipe in The Real Meal Revolution by Tim Noakes et al? This tuna pate recipe is the perfect accompaniment to them. That means if you are Banting you can make this as a snack for entertaining and eat it too. This pate is also delicious on wedges of cucumber.
200g canned tuna in brine
100ml melted butter
1T lemon juice
pinch of sugar
1T finely chopped parsley and chives
salt and pepper to taste
1t olive oil
25ml thick sour cream
Drain the tuna and place it in a food processor, together with all the ingredients. Blend until smooth. Taste and add more salt and pepper if required. Place in a serving bowl and refridgerate until needed.
