Layered Ice-cream Cake

For my husband's birthday my sons and I decided to make a cake from his most favourite treats.
We created an ice-cream cake layered with cookies and topped with dark chocolate. It looks good, tastes delicious and is very easy to make.



2litres ice-cream softened (use your favourite, or use a homemade recipe)

20 firm biscuits or cookies (bought or home made)

180g dark chocolate cut into small pieces
50ml double cream
20cm springform cake tin

Place the cream in a pot and warm or microwave for a minute. Add the chocolate and stir until it has melted. Allow to cool slightly.
Place a layer of biscuits at the bottom of the cake tin. Top with half of the ice-cream. Repeat with another layer of biscuits and ice-cream. Top with the chocolate ganache and place in the freezer to set.
20 minutes before serving remove the cake from the freezer. Unmould with a wet knife just before serving.
