Banting Style Oriental Fish Fingers

My husband is on Tim Noake's diet, referred to by those on the diet as "Banting". It is a high fat, low carb diet that has taken South Africa by storm. His book has wonderful recipes, a la my style of cooking - everything made from scratch! I decided to adapt his coconut crumbed white fish recipe to an oriental theme. This is easy to make and very tasty.
Serves 4

350g Hake
1 x-large egg beaten
1 cup dessicated coconut
1/2T finely grated fresh ginger
1T finely chopped coriander
1/2t finely chopped chili
salt and pepper to taste.
60g butter
lime wedges to serve.

Slice the fish into finger size pieces. Mix the egg together with the ginger, coriander, chili, salt and pepper. Place the coconut on a dinner plate.
Dip the fish in the egg and then in the coconut. Make sure each side is well coated. Fry in the melted butter, turning when golden brown.
Serve with courgette noodles.
Variation: Replace the chili with smoked paprika and the coriander with fresh flat leaf parsley. Serve with cauli-mash. Serve with lemon wedges.
Tip: this is a great snack served before a casual meal with homemade garlic mayonnaise.
