Brunch Idea - Bacon and Brie Sandwich with Poached Egg
This is a fantastic brunch idea and best served with the Onion marmalade recipe on my blog. Use a sour dough or ciabata bread for the toast. Serve 4.
8 slices of toast
250g bacon
4 eggs
100g brie
200g baby tomatoes
chutney
olive oil
balsamic vinegar
fresh basil or oregano to serve
Place the bacon and tomatoes in a roasting tray. Drizzle some olive oil and vinegar over the tomatoes. Cook at 180C until done to your liking.
Poach the eggs to your liking.
Slice the brie and melt it slightly under the grill.
Put the sandwiches together: a little chutney on the toast, top with bacon, eggs and tomato. Garnish with cheese and fresh herbs.

Alternatively, make the sandwiches using sliced brie that has not been melted, and place the sandwich under the grill just before serving to heat. Then garnish with fresh herbs.
