Notes from my Kitchen - Biscotti revisited
We are going to the lake for half-term with friends and I have a batch of biscotti in the oven. This recipe is a favourite and I often make it as hostess gifts, for new Moms and for teachers. I pack them in cellophane packets and tie on a pretty card and ribbon. Decorate with a fresh rose or lavender. They are easy to make and delicious to eat.
This made me think about alternate flavours to make with this recipe. Here are a few ideas:
1/2 cup coconut
1/2 cup dried cranberries
1t vanilla extract
1/2 cup dried cranberries
1/2 cup chopped almonds
1/2t almond extract
200g chocolate and hazelnut slab chopped
200g dark chocolate chopped
1T finely grated orange zest
1/2t orange flower water
1/2 cup chopped macadamia nuts
1T finely grated lemon zest
1t vanilla extract
1/2 cup chopped pistachios
1t rosewater
(decorate the gift with dried rose petals)
200g white chocolate
1t ground ginger
1t vanilla extract
1/2 cup chopped almonds
1/2 cup dried figs chopped
1/2 cup walnuts chopped
1t vanilla extract
Replace 50g of sugar with 50g of honey. Beat the eggs and sugar. Add the honey and vanilla. Use pine nuts instead of pecan nuts.
Tips: always use unsalted nuts
